Here’s an interesting twist to your traditional Pao Bhaji – The Pao Bhaji Kulcha! Not only is it easy to make, but makes for a delightful evening time snack as well.

How to cook ?


  • 2 cups/250gm all purpose flour (maida).
  • ½ tsp / 2 ½ gm salt.
  • ¼ tsp baking soda.
  • ½ tsp/2 ½ gm baking powder.
  • 2 tbsp/30gm yoghurt (dahi).
  • 2tbsp/30ml milk.
  • ½ tsp/2 ½ sugar.
  • 2tbsp/30ml vegetable oil.
  • Water to make the dough.
  • Butter for applying.

Method of Preparation

  • Sieve the flour with salt,baking soda, and baking powder.
  • Whisk the yoghurt with milk and sugar;add to the dough along with oil and knead to make an extra soft dough with water. Keep covered for 2 hours.
  • Divide the dough equally into 12 balls, flatten slighty, fill with 1tsp pav bhaji filing and fold to seal the filing inside.
  • Heat the gas tandoor or pressure cooker and stick the kulcha with the help of water on the back side and cook till light golden brown. Remove, apply butter and serve hot. Alternately, you can bake in the oven at 200.C / 400.F for 4-6 minutes or until light brown.
